Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • baking powder - 2 tsp
  • egg - 1 item
  • shortening - 3/4 c
  • grated zucchini
  • nuts or chocolate chips - 1 c

How to make zucchini cookies:

Cream shortening and sugar. Beat in egg and vanilla. Mix in zucchini, flour and dry ingredients. Drop by teaspoon on greased cookie sheet. Bake at 350° for 15 minutes. Makes 5 dozen. Put powdered sugar on them if you wish.
