Ingredients/Components
- eggs - 2 item
- butter - 1 Tbsp
- boiling water - 2 c
- Parmesan cheese - 1 c
- chopped green pepper - 1/4 c
- sliced zucchini - 4 c
- salt and pepper to taste - 1 item
- mayonnaise - 1 c
- onion, chopped - 1 item
- buttered bread crumbs - 2 Tbsp
How to make zucchini casserole:
Cook zucchini in water until tender. Strain. In large bowl, beat eggs. Stir in mayonnaise, onion, green pepper, cheese, salt and pepper. Add zucchini. Turn into greased 1 1/2-quart baking dish. Dot with butter and sprinkle with bread crumbs. Bake inRecipe categories: Egg, Side dish, Casseroles.
