Ingredients/Components

  • sour cream - 1 c
  • salt - 2 tsp
  • garlic powder - 1/4 tsp
  • chili powder - 2 tsp
  • salt and pepper to taste - 1 item
  • ground meat - 1 lb
  • green onions - 1/4 c
  • cooked rice - 3 c
  • can green chilies - 1 oz
  • Monterey Jack cheese - 2 c
  • medium zucchini, sliced thin - 3 item
  • large fresh tomato - 1 item

How to make zucchini casserole:

Saute beef, squash, onions and seasonings in skillet until meat is no longer pink and vegetables are tender. Stir frequently. Add chilies, rice, sour cream and 1 cup cheese. Pour into 2-pint casserole dish. Arrange tomato slices on top. Salt and pepper. Top with remaining cheese. Bake at 350° for 20 to 25 minutes.
