Zucchini casserole
Ingredients/Components
- sour cream - 1 c
- salt - 2 tsp
- garlic powder - 1/4 tsp
- chili powder - 2 tsp
- salt and pepper to taste - 1 item
- ground meat - 1 lb
- green onions - 1/4 c
- cooked rice - 3 c
- can green chilies - 1 oz
- Monterey Jack cheese - 2 c
- medium zucchini, sliced thin - 3 item
- large fresh tomato - 1 item
How to make zucchini casserole:
Saute beef, squash, onions and seasonings in skillet until meat is no longer pink and vegetables are tender. Stir frequently. Add chilies, rice, sour cream and 1 cup cheese. Pour into 2-pint casserole dish. Arrange tomato slices on top. Salt and pepper. Top with remaining cheese. Bake at 350° for 20 to 25 minutes.Recipe categories: Egg, Side dish, Casseroles.
