Zucchini casserole
Ingredients/Components
- pkg - 1 oz
- salt and pepper to taste - 1 item
- olive oil - 1 item
- large can whole tomatoes - 1 item
- to 4 medium zucchini - 3 item
- garlic or minced garlic - 1 item
How to make zucchini casserole:
Saute sliced zucchini in 1 tablespoon olive oil. Saute garlic (3 cloves), 3 to 5 minutes and add tomatoes. Simmer 5 minutes and then boil 10 to 12 minutes to thicken.In a casserole dish, layer as follows: (1) Cover bottom with tomato mixture, (2) zucchini, (3) tomato mixture, (4) shredded Mozzarella. Repeat until you end with cheese. Top with Parmesan. Bake at 375° for 25 to 35 minutes.
