Ingredients/Components

  • pkg - 1 oz
  • salt and pepper to taste - 1 item
  • olive oil - 1 item
  • large can whole tomatoes - 1 item
  • to 4 medium zucchini - 3 item
  • garlic or minced garlic - 1 item

How to make zucchini casserole:

Saute sliced zucchini in 1 tablespoon olive oil. Saute garlic (3 cloves), 3 to 5 minutes and add tomatoes. Simmer 5 minutes and then boil 10 to 12 minutes to thicken.

In a casserole dish, layer as follows: (1) Cover bottom with tomato mixture, (2) zucchini, (3) tomato mixture, (4) shredded Mozzarella. Repeat until you end with cheese. Top with Parmesan. Bake at 375° for 25 to 35 minutes.
