- sour cream - 1 c
- grated zucchini - 2 c
- grated carrot - 1 c
- can cream of chicken soup - 1 item
- onion, chopped fine - 1 item
- stick butter or margarine - 1 item
- bell pepper, chopped fine - 1 item
- herbed stuffing mix - 1 pkg
How to make zucchini casserole:
Preheat oven to 375°. Pour melted butter over stuffing mix; set aside. Combine all other ingredients in a large bowl. Stir in half of the stuffing mix; toss to mix. Spread vegetable mixture into a 9 x 13-inch baking pan. Sprinkle the remaining half of the stuffing mixture on top. Bake for 35 to 40 minutes.Recipe categories: Egg, Side dish, Casseroles.
