  • eggs, beaten - 2 item
  • Parmesan cheese - 1/2 c
  • bread crumbs - 1/2 c
  • onion, chopped - 1 item
  • ground beef or turkey - 1/2 lb
  • zucchini, peeled and boiled

How to make zucchini casserole:

Brown ground beef and drain excess fat. Add onion and saute. Mash squash and add to meat. Stir small amount of meat mixture into eggs to prevent eggs from cooking. Stir into meat mixture in skillet. Add bread crumbs and some cheese. Pour into buttered dish. Sprinkle remaining cheese. Bake at 350° for 40 minutes.
