Ingredients/Components
- eggs - 2 item
- water - 2 c
- Parmesan cheese - 1 c
- chopped green pepper - 1/4 c
- sliced zucchini - 4 c
- salt and pepper to taste - 1 item
- mayonnaise - 1 c
- medium onion - 1 item
- crushed Ritz crackers - 1 item
How to make zucchini casserole:
Cook zucchini until tender and drain. Beat eggs and stir in mayonnaise and add rest of ingredients.Pour in a greased 1 1/2-quart casserole. Dot with butter. Top with cracker crumbs. Bake in 350° oven for 30 minutes.
