  • stick margarine - 1/2 item

  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • nuts - 1 c
  • powdered sugar - 2 c
  • raisins - 1 c
  • ground or grated zucchini unpeeled - 3 c
  • Add eggs; beat after each egg is added

How to make zucchini cake:

Blend and cream oil and sugar. Add eggs; beat after each egg is added. Add zucchini and mix. Mix flour, baking powder, baking soda, salt and cinnamon together; add to zucchini mixture and beat well. Fold in nuts and raisins. Bake in a 9 x 15-inch or 11 x 17-inch pan at 350° for approximately 1 hour. Cool.Frosting:1 (3 oz.) pkg. cream cheese1 tsp. vanilla1/2 stick margarine2 c. powdered sugar1/2 c. nuts Beat the cream cheese, vanilla and margarine until smooth. Add sugar; beat until smooth. Fold in nuts.
