Zucchini bread

Ingredients/Components

• grated zucchini - 2 c
• corn oil - 1 c
• eggs, slightly beaten - 3 item
• vanilla - 2 tsp
• plain flour
• nutmeg - 1 tsp
• cinnamon - 1 tsp
• baking soda - 3 tsp
• salt - 1 tsp
• sugar - 2 c
• chopped nuts - 1 c
• cherries - 1 c
• raisins - 2 c

How to make zucchini bread:

In a large plastic bowl, mix first 4 ingredients. Add half of the dry ingredients which have already been sifted together. Mix well. Add remaining half. Fold in nuts, cherries and raisins. Grease and flour 2 loaf pans and fill 2/3 full. Bake 1 hour at 350°. Makes 2 loaves.
