Zucchini bread
Ingredients/Components
- eggs - 3 item
- oil - 1 c
- vanilla - 1 Tbsp
- zucchini, grated - 2 c
- salt - 1 tsp
- sugar
- cinnamon - 1 Tbsp
- flour - 3 c
- baking soda - 1 tsp
- baking powder - 1/4 tsp
How to make zucchini bread:
Beat eggs. Add oil, vanilla and zucchini. Sift together salt, sugar, cinnamon, flour, baking soda and baking powder. Add to liquid ingredients. Pour into 2 loaf pans* and bake at 350° for 1 hour.Variations:
Banana squash or pumpkin can be substituted for zucchini.
Can add 1 cup nuts of your choice (walnuts, pecans, almonds, etc.)
Try grated carrots and/or grated apples, raisins, white raisins or bananas.
Be creative and enjoy!!!
*If using regular muffin pans, bake at 350° for 30 to 40 minutes. Makes 2 dozen. Mini muffin pans bake at 350° for 15 to 20 minutes. Makes about 6 dozen.
