Ingredients/Components
- sugar
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- oil - 1 c
- baking powder - 1/4 tsp
- baking soda - 2 tsp
- raisins - 1 c
- zucchini, grated - 2 c
How to make zucchini bread:
Beat eggs lightly into large bowl. Stir in oil, sugar, zucchini and vanilla. Sift flour, baking soda, baking powder, cinnamon and salt onto wax paper. Stir into egg mixture until well blended. Stir in raisins and nuts. Spoon batter into 2 well-greased and floured 8 x 5 x 3-inch loaf pans. Bake at 375° for 1 hour or until center springs back when pressed with finger tip.
