Zucchini bread
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- salt - 1/4 tsp
- flour
- nutmeg - 1/4 tsp
- soda - 1/2 tsp
- baking powder - 1/4 tsp
- chopped walnuts - 1/2 c
- cooking oil - 1/4 c
- shredded unpeeled zucchini - 1 c
- shredded lemon peel - 1/4 tsp
How to make zucchini bread:
In mixing bowl, combine flour, cinnamon soda, salt, baking powder and nutmeg. In another bowl, combine zucchini, sugar, cooking oil and lemon peel. Mix well. Add flour mixture. Stir just until combined. Stir in nut meats. Pour batter into loaf pan, 8 x 4 x 2-inch. Bake in a 350° oven for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on wire rack. Remove from pan. Let cool and wrap. Let stand overnight before slicing.Recipe categories: Breads, Quick breads, Sweet.
