Zucchini bread
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 3 item
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 3/4 tsp
- raisins - 1 c
- shredded, unpeeled zucchini - 2 c
How to make zucchini bread:
In a large bowl stir together flour, sugar, cinnamon, salt, baking powder, soda, zucchini, nuts and raisins. In another bowl beat eggs and oil. Pour over flour mixture and stir until moistened. Turn into greased 9 x 5 x 3-inch loaf pan. Bake in a 350° oven for 1 hour and 30 minutes or until pick inserted in center comes out clean. Cool in pan 10 minutes, invert on rack, turn top side up and cool completely. Doubles well.Recipe categories: Breads, Quick breads, Sweet.
