Zucchini bread
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 3 item
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 3/4 tsp
- raisins - 1 c
- shredded, unpeeled zucchini - 2 c
How to make zucchini bread:
In large bowl, sift together flour, sugar, cinnamon, salt, soda and baking powder. Add zucchini, raisins and nuts.In another bowl, blend eggs and oil; pour over flour mixture and stir until moistened.
Turn into greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 hour and 30 minutes or until inserted pick comes out clean. Cool in pan 10 minutes. Invert on rack. Turn top side up and completely cool.
