Zucchini bread

Ingredients/Components

• sugar
• cinnamon - 3 tsp
• eggs - 3 item
• vanilla - 3 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• flour - 3 c
• baking soda - 1 tsp
• salad oil - 1 c
• minced zucchini, chopped fine not peeled - 2 c

How to make zucchini bread:

Beat eggs well. Beat in sugar; add oil slowly. Add vanilla. Sift flour and dry ingredients; add egg mixture, nuts and zucchini. Bake at 350° for 60 to 70 minutes. Makes two 9 x 5-inch loaves or you may use 4 small pans and bake at 350° for 50 minutes.
