Ingredients/Components

  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 3 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • oil - 1 c
  • soda - 1 tsp
  • baking powder - 1/4 tsp
  • grated zucchini - 2 c

How to make zucchini bread:

Beat eggs until light. Add oil, sugar, zucchini, vanilla and nuts. Mix lightly, but well. Add flour, salt, soda, cinnamon and baking powder. Mix until blended in one bowl with electric mixer. Put in two loaf pans. Bake one hour at 325° to 350°.
