Ingredients/Components

  • eggs - 3 item
  • oil - 1 c
  • sugar - 2 c
  • salt - 1 tsp
  • cinnamon - 3 tsp
  • vanilla - 3 tsp
  • flour - 3 c
  • baking soda - 1 tsp
  • baking powder - 1 tsp
  • peeled and grated zucchini - 2 c
  • nuts optional - 1/2 c
  • raisins optional - 1 c

How to make zucchini bread:

Beat eggs until light. Add oil, squash and vanilla. Mix well; add dry ingredients and blend. Add nuts and raisins. Pour into 2 well-greased and floured loaf pans. Bake 1 hour at 325°. Remove from pans at once.
