Zucchini appetizers
Ingredients/Components
- chopped onion - 1/2 c
- Parmesan cheese - 1/2 c
- dash of pepper - 1 item
- oregano - 1/2 tsp
- parsley - 2 Tbsp
- eggs, slightly beaten - 4 item
- large chopped garlic cloves - 3 item
- thinly sliced zucchini, unpeeled - 7 c
- Bisquick or flour - 1 c
- oil or a little less - 1/2 c
How to make zucchini appetizers:
Mix all ingredients together. Add Bisquick or flour last. Spread in greased 13 x 9-inch pan and bake until golden brown on top, about 45 to 50 minutes at 350°. Cut into finger size squares. Makes about 40.Can be used as a main course with salad or as a vegetable dish.
