  • butter or margarine - 1/4 c
  • salt - 1/4 tsp
  • egg, beaten - 1 item
  • chopped onion - 1/3 c
  • chicken broth - 1 c
  • dash of pepper - 1 item
  • parsley - 1 Tbsp
  • diced celery - 1/3 c
  • poultry seasoning - 3/4 tsp
  • uncooked wild rice - 3/4 c
  • toasted bread cubes

How to make wild rice stuffing:

Cook rice in salted water (3 cups water and 3/4 teaspoon salt). Bring to boil, then simmer, covered, until kernels open, approximately 45 minutes. Melt butter in large skillet; saute onion and celery until onion is tender. Stir in rice, bread cubes, parsley, poultry seasoning, salt and pepper. Gently stir in broth and egg. Spoon into buttered 1 1/2-quart casserole. Bake, covered, in preheated 350° oven for 20 minutes; uncover and bake 10 minutes longer. Makes 5 to 6 servings.
