Watermelon rind pickles
Ingredients/Components
- sugar - 7 c
- cinnamon - 1 tsp
- vinegar - 2 c
- cloves - 1 tsp
- rind from 1 watermelon, cut in 1-inch cubes
How to make watermelon rind pickles:
Trim the green and pink from rind of 1 watermelon. Cut rind in 1-inch cubes; boil until just tender, not soft. Drain. Make syrup of the remaining ingredients. Bring syrup to boil and pour over rind. Let stand overnight. Drain, reheat syrup and pour over rind.Third Day: Heat rind and syrup. Seal in sterilized jars.
