  • sugar - 12 c
  • vinegar - 4 c
  • alum - 1 tsp
  • stick cinnamon - 1 pkg
  • whole cloves - 2 Tbsp
  • watermelon rind white only - 1 item

How to make watermelon pickles:

Peel rind from melon. Cut off green outer rind and any pink flesh. Cut into bite-size pieces. Cover with water and add alum. Stir and bring to a boil. Simmer for 1 hour. Combine vinegar, sugar and spices and bring to a boil. Add the rind and bring to a boil again. Place in jars and seal.
