Veggie chili
Ingredients/Components
- water - 2 c
- chili powder - 2 Tbsp
- can tomato sauce - 1 item
- oregano - 1 tsp
- basil - 1 tsp
- black pepper - 2 tsp
- chopped zucchini - 2 c
- medium onion, chopped - 1 item
- green pepper, chopped - 1/2 item
- can chili beans - 1 item
- canola oil - 2 tsp
- can diced tomatoes - 1 item
- large can diced tomatoes with juice - 1 item
How to make veggie chili:
Saute onion, green pepper and zucchini in oil in medium stock pan until tender. Add beans, tomatoes and tomato sauce. Mix well. Add spices. Mix well again. Add water. Bring mixture to a boil. Reduce heat and simmer for 35 to 40 minutes. Serve topped with low-fat sharp Cheddar cheese. Makes about 8 to 10 (1 cup) servings.Recipe categories: Main dish, Vegetarian, Chili.
