Ingredients/Components

  • chopped onion
  • chopped green pepper - 1 c
  • cloves garlic, crushed - 3 item
  • vegetable oil - 2 Tbsp
  • medium carrots, thinly sliced - 3 item
  • cans tomatoes, cut up and undrained - 2 oz
  • can chickpeas, drained - 1 oz
  • can kidney beans, drained - 1 oz
  • pkg - 1 oz
  • pickled jalapeno pepper, seeded and chopped - 1 item
  • chili powder - 2 Tbsp
  • ground cumin - 1/2 tsp

How to make vegetarian chili:

Saute onion, green pepper and garlic in oil until tender. Add carrots; cook 2 minutes, stirring occasionally. Stir in remaining ingredients; mix well. Bring to boil; reduce flame. Cover; simmer 45 minutes, stirring occasionally. Yield: 8 servings.
