Vegetarian chili
Ingredients/Components
- chopped onion
- chopped green pepper - 1 c
- cloves garlic, crushed - 3 item
- vegetable oil - 2 Tbsp
- medium carrots, thinly sliced - 3 item
- cans tomatoes, cut up and undrained - 2 oz
- can chickpeas, drained - 1 oz
- can kidney beans, drained - 1 oz
- pkg - 1 oz
- pickled jalapeno pepper, seeded and chopped - 1 item
- chili powder - 2 Tbsp
- ground cumin - 1/2 tsp
How to make vegetarian chili:
Saute onion, green pepper and garlic in oil until tender. Add carrots; cook 2 minutes, stirring occasionally. Stir in remaining ingredients; mix well. Bring to boil; reduce flame. Cover; simmer 45 minutes, stirring occasionally. Yield: 8 servings.Recipe categories: Main dish, Beans, Chili.
