Seafood gumbo
Ingredients/Components
- pkg - 1 oz
- salt - 2 Tbsp
- flour - 2 Tbsp
- water - 3 c
- vegetable oil - 2 Tbsp
- clove garlic, minced - 1 item
- Worcestershire sauce - 1 Tbsp
- chopped onion - 3/4 c
- chili powder - 1 tsp
- bay leaf - 1 item
- chopped green pepper - 1/4 c
- can tomato paste - 1 item
- can whole tomatoes - 1 oz
- crushed basil - 1/2 tsp
- frozen snow crab, partially thawed - 1/2 lb
- shelled, uncooked shrimp - 1/2 lb
- fresh or frozen haddock or halibut, cut in chunks - 1/2 lb
How to make seafood gumbo:
In Dutch oven, combine onion, green pepper, flour, oil and garlic. Cook, stirring until vegetables are tender, but not brown. Add tomatoes, tomato paste, water, Worcestershire sauce, salt, chili, basil and bay leaf. Simmer uncovered for 45 minutes.Remove bay leaf. Add crab, shrimp, fish and okra. Cover and simmer for 8 to 10 minutes longer or just until seafood is done. Serve over rice. Serves 8.
