Ingredients/Components

  • salt - 1 tsp
  • cooking oil - 1 Tbsp
  • chopped onion - 1/2 c
  • chopped green pepper - 1/2 c
  • clove garlic, crushed - 1 item
  • boiling chicken broth
  • uncooked brown rice - 1 c
  • sliced zucchini squares - 2 c
  • small tomatoes, cut in eighths - 3 item

How to make vegetable rice casserole:

Saute rice in oil, over low heat, until golden brown (5 to 10 minutes). Spread rice in a greased 2 1/2-quart casserole dish. Layer onion, green pepper, zucchini and tomatoes over rice. Add salt and garlic to broth, then pour over vegetables. Cover and bake at 350° for 1 hour and 15 minutes, or until liquid is absorbed and vegetables are tender. Makes 6 to 8 servings.
