Vegetable rice casserole
Ingredients/Components
- salt - 1 tsp
- cooking oil - 1 Tbsp
- chopped onion - 1/2 c
- chopped green pepper - 1/2 c
- clove garlic, crushed - 1 item
- boiling chicken broth
- uncooked brown rice - 1 c
- sliced zucchini squares - 2 c
- small tomatoes, cut in eighths - 3 item
How to make vegetable rice casserole:
Saute rice in oil, over low heat, until golden brown (5 to 10 minutes). Spread rice in a greased 2 1/2-quart casserole dish. Layer onion, green pepper, zucchini and tomatoes over rice. Add salt and garlic to broth, then pour over vegetables. Cover and bake at 350° for 1 hour and 15 minutes, or until liquid is absorbed and vegetables are tender.
