Vegetable rice
Ingredients/Components
- water - 2 c
- margarine - 3 4
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- diced, unpeeled zucchini - 1 c
- chicken bouillon granules or 1 cube - 2 tsp
- long grain rice or Minute rice - 1 c
- chopped green pepper or use dry flakes in rice - 1/2 c
- dried sweet basil or 2 tsp - 1 tsp
How to make vegetable rice:
In medium saucepan, bring water and bouillon to a boil. Add rice. Bring back to boiling and simmer until done. (If using Minute rice, follow directions on package.)Meanwhile, saute vegetables in margarine until soft. When rice is done, mix into vegetables. Add basil. Cover and let set for 5 to 10 minutes for flavors to mix. Serves 4.
