Vegetable curry
Ingredients/Components
- salt - 1 tsp
- butter - 4 Tbsp
- water
- ground ginger - 1 tsp
- cloves garlic, minced - 2 item
- chili powder - 1/4 tsp
- black pepper - 1 item
- large onion, chopped - 1 item
- sliced carrots - 2 c
- can tomatoes - 1 oz
- diced potatoes - 2 c
- each: ground coriander and cumin - 3 tsp
- frozen peas green - 1 c
How to make vegetable curry:
Melt butter. Add onion. Saute 7 to 8 minutes. Add garlic and spices. Saute 2 to 3 minutes. Add tomatoes, salt, pepper and water. Simmer 5 to 10 minutes. Add potatoes and carrots. Simmer 15 to 25 minutes (until vegetables almost tender). Add peas. Simmer 5 minutes. Serve over rice.Recipe categories: Vegetables, Main dish, Curries.
