Turkey tortilla casserole
Ingredients/Components
- pepper - 1 tsp
- chopped onion - 1/2 c
- chopped celery - 1/4 c
- salsa - 1 c
- shredded Cheddar cheese - 1 c
- shredded Monterey Jack cheese - 1 c
- can diced green chilies - 4 oz
- reduced sodium chicken broth - 1/2 c
- chopped turkey or chicken - 3 c
- to 12 6-inch corn tortillas, torn into bite size pieces - 10 item
- can reduced sodium chicken soup - 1 3/4
How to make turkey tortilla casserole:
In saucepan, combine onion, chicken broth and celery. Bring to boil and reduce heat. Simmer covered for 5 or 6 minutes until vegetables are tender.In large bowl, stir together onion mixture, turkey or chicken, tortillas, green chilies, soup and pepper. Set 1/2 cup of each cheese aside and stir remaining cheese into mixture. Lightly grease a 13 x 9 x 2-inch pan and pour ingredients into pan. Top with salsa and reserved cheeses. Bake in a 350° oven for 30 minutes or until heated through. Let stand 5 minutes before serving. Serves 10 to 12. (Flour tortillas may be used.) Great for pot lucks!
