Turkey tetrazzini
Ingredients/Components
- butter or margarine - 1/4 c
- salt - 2 tsp
- flour - 3 Tbsp
- light cream
- pepper - 1/4 tsp
- grated Parmesan cheese - 1 item
- mushrooms, sliced - 3/4 lb
- pimientos, chopped - 2 item
- diced, cooked turkey - 4 c
- sherry - 2 Tbsp
- egg yolks, beaten - 2 item
- small green pepper, slivered - 1 item
- fine spaghetti, cooked - 6 oz
How to make turkey tetrazzini:
Cook mushrooms and green pepper in butter for 5 minutes. Blend in flour and seasonings. Add cream and cook, stirring, until thickened. Add turkey, pimiento and sherry. Heat. Divide spaghetti into 6 broiler-safe individual baking dishes or put into 1 shallow baking dish. Add a small amount of turkey mixture to egg yolks; then stir in remaining mixture. Pour over spaghetti and sprinkle with cheese. Bake at 300° for about 45 minutes. Put under broiler to brown lightly. Serves 6.Recipe categories: Main dish, Casseroles, Turkey.
