Turkey meatball sandwiches
Ingredients/Components
- lemon juice - 1 tsp
- chopped onion - 1/4 c
- ground turkey
- garlic clove, minced - 1 item
- black pepper - 1/8 tsp
- dried oregano
- medium cucumber, peeled and finely chopped - 1/2 item
- nonfat sour cream
- lettuce and tomato - 1 item
- each: dried mint, parsley and lemon pepper - 1/2 tsp
- 6-inch pita breads - 3 item
How to make turkey meatball sandwiches:
Sauce:1/2 c. nonfat sour cream1/2 medium cucumber, peeled and finely chopped1 1/2 tsp. lemon juice1/8 tsp. black pepper3 (6-inch) pita breads lettuce and tomato Combine turkey meatball ingredients; mix well. Shape into 18 (1 1/4-inch) balls. Coat skillet with nonstick cooking spray and cook meatballs 8 to 10 minutes or until browned and no longer pink inside. Cut each pita bread in half crosswise. Shred lettuce and chop tomatoes.Sauce: Combine ingredients. Place 3 meatballs in each half pita. Add lettuce and tomato. Top with sauce. Makes 6 servings.
