Ingredients/Components

  • cubed, cooked potatoes - 2 c
  • cubed cooked turkey - 2 2
  • large onion, chopped fine - 1 item
  • canola oil, divided - 1 Tbsp
  • dry unseasoned bread crumbs
  • finely minced fresh parsley - 1/4 c
  • chicken or turkey broth or leftover gravy - 2/3 c

How to make turkey hash:

In nonstick skillet heat 2 teaspoons of the oil. Add onion. Saute over medium-low heat until onion begins to brown. Stir in potatoes, turkey and parsley. Season to taste. Add broth or gravy. Brush 9 to 10-inch round baking dish or cast-iron skillet with remaining oil and spoon in turkey mixture. Sprinkle with bread crumbs. Bake 30 to 40 minutes until top is nicely browned in 350° oven. Serve with ketchup.
