How to make tuna casserole:

If you enjoy turkey, but dislike wondering what to do with leftovers, this is the perfect solution. A good bargain when turkey is cheap, also. Have butcher cut in half a 10 to 12 pound turkey (fresh or frozen). Wrap halves separately and freeze until needed.

To roast turkey half: Thaw and wash turkey. Season cavity and skin with salt, pepper, garlic and onion powder. In a roasting pan place a cut up onion, apple and few celery stalks in a pile. Place turkey cavity over vegetables. Add a few peppercorns and 1 cup water. Roast, covered, in 375° oven for an hour. Remove cover, add more water if needed. Roast until turkey is done, about an hour. Make gravy from pan drippings. If you want dressing, make your favorite and bake as a casserole.

Note: Half of turkey is great done on the grill. Poach it first or put on as is using your favorite sauce to baste.
