Too-easy tortellini soup
Ingredients/Components
- pkg - 1 oz
- coarsely ground pepper optional - 1 item
- chicken broth - 4 c
- dried basil
- red wine vinegar or cider vinegar - 1 Tbsp
- shredded Parmesan cheese optional - 1 item
- can white kidney or cannellini beans, rinsed and drained - 1 oz
- can Italian diced tomatoes undrained - 1 1/2
How to make too-easy tortellini soup:
In a large saucepan, bring broth to a boil; stir in tortellini. Reduce heat; simmer, uncovered, for 4 minutes, stirring occasionally. Stir in the beans, tomatoes and basil. Simmer for 4 to 6 minutes or until pasta is tender. Stir in the vinegar; sprinkle with Parmesan cheese and pepper, if desired.
