Ingredients/Components

  • sugar - 1 tsp
  • salt - 1 tsp
  • salad oil - 1/4 c
  • prepared mustard - 2 tsp
  • parsley, chopped - 1/2 c
  • garlic clove, crushed - 1 item
  • pepper, freshly ground - 1/4 tsp
  • ripe tomatoes, peeled - 8 item
  • wine vinegar red or white - 2 Tbsp

How to make tomatoes lutece:

Immerse tomatoes in boiling water for 1 minute. Remove and peel with a knife. Combine remaining ingredients to make dressing. Slice peeled tomatoes into 1/4-inch thick slices. Restack tomatoes with dressing poured between slices and over top. Where stem is removed, place a sprig of parsley, marinating to enhance flavor.
