Ingredients/Components
- sugar - 2 tsp
- milk
- salt - 1/2 tsp
- butter - 2 Tbsp
- cider vinegar - 1 c
- salad oil - 1/2 c
- dry mustard - 1 tsp
- pepper - 1/8 tsp
- prepared mustard - 1 Tbsp
- chopped green onion - 1/2 c
- dash of cayenne pepper - 1 item
- egg yolks, slightly beaten - 3 item
- or 10 well scrubbed, unpared, medium potatoes - 3 lb
- Add 1/2 teaspoon salt
How to make old-fashioned potato salad:
Marinade:1 1/2 tsp. salt1 tsp. dry mustard1 c. cider vinegar1/2 c. salad oil1/8 tsp. pepper dash of cayenne pepper1/2 c. chopped green onion Place in boiling water the potatoes. Add 1/2 teaspoon salt. Boil until done; drain, slice or cube. Place potatoes in marinade. Marinate 1/2 hour in refrigerator.Boiled Dressing:1 Tbsp. flour1 1/4 c. milk1 Tbsp. prepared mustard2 tsp. sugar3 egg yolks, slightly beaten1 tsp. salt1/4 c. cider vinegar2 Tbsp. butter Cool dressing; pour over marinated potatoes.
