Ingredients/Components

  • olive oil - 1/4 c
  • pinch of sugar - 1 item
  • minced garlic - 1/2 c
  • balsamic vinegar - 1/4 c
  • black pepper to taste - 1 item
  • basil and oregano to taste - 1 item
  • cans peeled tomatoes - 2 (28
  • cans low-salt chicken broth - 3 item
  • red wine vinegar or less - 1/4 c
  • to 5 cloves fresh garlic, pressed - 4 item
  • to 6 small red new potatoes - 5 item
  • fresh spinach leaves, packed - 4 c

How to make tomato and garlic soup:

Saute garlic in olive oil for 5 minutes on medium. Add chicken broth; let simmer.

Meanwhile, clean and coarsely chop potatoes with skin on. Microwave to halfway cook in covered bowl. Coarsely chop tomatoes, being sure to save all juice. Add tomatoes and juice to broth mixture. Add potatoes, balsamic vinegar, pepper, sugar and spices to soup; simmer for about 45 minutes, until potatoes are soft but not mushy. Add fresh garlic and spinach leaves. Increase tartness by adding red wine vinegar to taste (or add white vinegar and red wine together for same effect). Remove from heat; serve when spinach is wilted but still has bright green color. Can be stored in refrigerator for a couple of weeks, but spinach will begin to lose color. Serve with or without garlic and olive oil homemade croutons.
