Tomato and bread salad
Ingredients/Components
- olive oil - 1/2 c
- salad greens - 1 item
- balsamic vinegar - 1/4 c
- chopped fresh basil - 3 Tbsp
- clove garlic, mashed - 1 item
- medium tomatoes, chunked - 6 item
- small baguette French bread about 12 inches long - 1 item
How to make tomato and bread salad:
Preheat oven to 300°. Split baguette in half lengthwise. Rub one half with garlic on cut side. Brush with olive oil. Cut garlic side in half again, lengthwise, then into 3/4-inch pieces. Place croutons on cookie sheet, crust side down and bake until golden, 30 minutes or more.To serve, add croutons, onions and basil to tomatoes. Whisk together with oil and vinegar for vinaigrette and pour over salad greens; toss. Put together at last minute. Serves 6.
