Ingredients/Components

  • sugar - 2 c
  • butter - 1 lb
  • baking powder
  • pecan halves - 4 c
  • eggs, well beaten - 6 item
  • sifted all-purpose flour - 4 c
  • lemon extract - 1 Tbsp
  • white raisins - 2 c

How to make texas pecan cake:

Heat oven to 300°. Grease and flour 9 3/4-inch tube pan.

Blend butter and sugar in large bowl. Beat until fluffy. Gradually add eggs and lemon extract and beat until blended. Sift flour and baking powder together 3 times. Add nuts and raisins to flour. Gradually add flour mixture to creamed mixture, blending thoroughly. Pour into prepared pan. Bake 1 1/2 to 2 hours. Cool 15 minutes. Remove from pan and cool completely.
