Tamale bites
Ingredients/Components
- salt - 1/2 tsp
- can tomato sauce - 1 oz
- ground beef
- shredded Monterey Jack cheese - 1/2 c
- crumbled cornbread - 2 c
- can mild enchilada sauce - 1 oz
How to make tamale bites:
Combine cornbread, 1/2 cup enchilada sauce and salt. Add beef. Mix well. Shape into 1-inch balls. Place in shallow pan. Bake, uncovered, in 350° oven for 18 to 20 minutes. Drain.Meanwhile, in saucepan, heat tomato sauce and remaining enchilada sauce. Place cooked meat balls in chafing dish, pour sauce over and top with cheese. Keep warm over low heat. Serve with wooden toothpicks. Makes 90.
