Ingredients/Components

  • milk - 2 c
  • salt - 1 item
  • butter
  • all-purpose flour - 2 Tbsp
  • clove garlic, minced - 1 item
  • grated Parmesan cheese - 1/2 c
  • long grain rice - 1 c
  • can tomato sauce - 1 oz
  • medium onion, finely chopped - 1 item
  • slivered almonds - 1/2 c
  • dash of cayenne pepper - 1 item
  • shredded Monterey Jack cheese - 1 c
  • sliced ripe olives - 1/2 c
  • vegetable broth or water - 1 c
  • medium green pepper, seeded and chopped - 1 item
  • olive oil approximately - 1/2 c
  • eggs and 1 egg yolk - 2 item
  • each: ground cinnamon and dried oregano leaves - 1/4 tsp
  • dash of each: nutmeg and white pepper - 1 item

How to make vegetable moussaka:

Cream Sauce:2 Tbsp. butter2 Tbsp. all-purpose flour1/2 tsp. salt dash of each: nutmeg and white pepper2 c. milk2 eggs and 1 egg yolk Cream Sauce: Melt the butter in a saucepan. Stir in the flour, salt, nutmeg and white pepper. Gradually add the milk. Cook, stirring, until thickened. Beat the eggs and egg yolk; add a little of the prepared sauce. Add to remaining sauce, stirring over low heat until blended.

Preparation: Cut, unpeeled eggplant crosswise into 1/2-inch slices. Sprinkle with salt; let stand while preparing rice. Heat 3 tablespoons oil in a large frying pan. Stir in rice, onion, green pepper and almonds; cook until rice browns lightly. Mix in garlic, tomato sauce, broth or water and seasonings. Bring to boiling. Reduce heat; cover and cook until rice is tender, about 20 minutes. Mix in olives and Jack cheese. Blot moisture from eggplant. Arrange on rack of broiler pan. Brush with about half of the remaining oil. Broil until lightly browned, about 5 minutes. Turn; brush with remaining oil and broil until lightly browned. Place half of the eggplant in a shallow 3-quart casserole. Add layers of rice, remaining eggplant and cream sauce, sprinkling each layer with 2 tablespoons Parmesan cheese. Bake at 350° until brown, 45 minutes to 1 hour.
