Szechuan shrimp
Ingredients/Components
- cornstarch - 1 Tbsp
- water - 3 Tbsp
- oil
- soy sauce - 1 Tbsp
- catsup - 1/2 c
- sesame seed - 1 Tbsp
- dry sherry - 3 Tbsp
- large cloves garlic, minced - 3 item
- minced shallots - 1/2 c
- Tabasco - 1/4 tsp
- shelled and deveined shrimp - 1 lb
- minced bamboo shoots - 1/2 c
- or more minced ginger - 1/4 tsp
How to make szechuan shrimp:
Combine scallions, bamboo shoots, ginger, garlic and Tabasco in small bowl. In second bowl, combine sugar, catsup, sherry, soy sauce and sesame seed. In a third bowl, mix cornstarch and water. Heat oil to 400°. Add shrimp to hot oil; cook about 2 minutes. Remove to strainer. Heat 2 tablespoons of oil. Add contents of first bowl, then second bowl, shrimp and then cornstarch with water.
