Wild rice soup
Ingredients/Components
- half and half - 2 c
- salt - 1/2 tsp
- margarine - 1/4 c
- dry mustard - 1/2 tsp
- paprika - 1/2 tsp
- chicken broth - 6 c
- curry powder - 1/2 tsp
- white pepper - 1/4 tsp
- sliced mushrooms
- medium onion, chopped - 1 item
- sliced celery - 1/2 c
- cooked wild rice - 2 c
- dry sherry optional - 2/3 c
- flour more is optional - 1/2 c
- dry chervil optional - 1/2 tsp
- chopped parsley/chives on top - 1 item
How to make wild rice soup:
In heavy kettle, melt butter. Add onion and celery. Cook 5 minutes until golden. Add mustard. Mix flour in, gradually add broth, stirring constantly, 5 to 8 minutes until slightly thick.
