Ingredients/Components

  • flour - 3 Tbsp
  • oil - 2 Tbsp
  • stick butter - 1/2 item
  • chicken broth - 1 c
  • bay leaf - 1 item
  • salt and pepper - 1 item
  • garlic cloves, minced - 2 item
  • thyme - 1 tsp
  • beef broth - 1 c
  • round steak 1 1/2-inches thick - 2 lb
  • large onion, thin sliced - 1 item

How to make swiss steak:

Sprinkle steak with salt and pepper. Combine flour and thyme. Dredge steak in the mixture. Pound the mixture in with a meat pounder. Let steak stand for 30 minutes and pound in any remaining flour mixture.

In heavy skillet, brown steak in 1/2 stick butter and oil over high heat; reduce heat to moderate and add onion and garlic. Cook until onion is soft, stir in broths and bay leaf and bring to boil. Simmer, covered, for 2 1/2 hours. Add broth, if necessary.

Note: May delete garlic and thyme. May bake, if preferred.
