Swiss steak
Ingredients/Components
- flour - 3 Tbsp
- oil - 2 Tbsp
- stick butter - 1/2 item
- chicken broth - 1 c
- bay leaf - 1 item
- salt and pepper - 1 item
- garlic cloves, minced - 2 item
- thyme - 1 tsp
- beef broth - 1 c
- round steak 1 1/2-inches thick - 2 lb
- large onion, thin sliced - 1 item
How to make swiss steak:
Sprinkle steak with salt and pepper. Combine flour and thyme. Dredge steak in the mixture. Pound the mixture in with a meat pounder. Let steak stand for 30 minutes and pound in any remaining flour mixture.In heavy skillet, brown steak in 1/2 stick butter and oil over high heat; reduce heat to moderate and add onion and garlic. Cook until onion is soft, stir in broths and bay leaf and bring to boil. Simmer, covered, for 2 1/2 hours. Add broth, if necessary.
Note: May delete garlic and thyme. May bake, if preferred.
