Ingredients/Components

  • flour - 3 Tbsp
  • butter - 2 Tbsp
  • dry mustard - 3/4 tsp
  • clove garlic - 1 item
  • salt and pepper - 1/2 tsp
  • sherry - 1 Tbsp
  • horseradish - 1/2 tsp
  • grated Swiss cheese
  • thinly sliced onions - 3 c
  • water or chicken stock - 2 c

How to make swiss cheese and onion soup:

Heat 2 tablespoons butter in saucepan. Add garlic, onion, mustard and salt. Saute until tender. Add stock. Cover and simmer over low heat.

In saucepan, melt remaining 3 tablespoons butter, whisk in 3 tablespoons flour, whisking over low heat one minute. Add milk. Cook until uniform and thick 5 to 8 minutes. Add horseradish, sherry and cheese. Add cheese sauce to onion mixture. Cook over low heat 8 to 10 minutes.
