Swiss cheese and onion soup
Ingredients/Components
- flour - 3 Tbsp
- butter - 2 Tbsp
- dry mustard - 3/4 tsp
- clove garlic - 1 item
- salt and pepper - 1/2 tsp
- sherry - 1 Tbsp
- horseradish - 1/2 tsp
- grated Swiss cheese
- thinly sliced onions - 3 c
- water or chicken stock - 2 c
How to make swiss cheese and onion soup:
Heat 2 tablespoons butter in saucepan. Add garlic, onion, mustard and salt. Saute until tender. Add stock. Cover and simmer over low heat.In saucepan, melt remaining 3 tablespoons butter, whisk in 3 tablespoons flour, whisking over low heat one minute. Add milk. Cook until uniform and thick 5 to 8 minutes. Add horseradish, sherry and cheese. Add cheese sauce to onion mixture. Cook over low heat 8 to 10 minutes.
