Sweet potato soup
Ingredients/Components
- water - 2 c
- ground nutmeg - 1/4 tsp
- plain low-fat yogurt - 1/4 c
- skim milk
- instant chicken bouillon granules - 3/4 tsp
- medium onion, chopped - 1 item
- medium parsnip, chopped - 1 item
How to make sweet potato soup:
In a large saucepan, combine sweet potatoes, water, parsnip, onion, bouillon granules and nutmeg. Bring to boiling; reduce heat. Cover and simmer for 20 to 30 minutes or until vegetables are very tender. Transfer to a blender container. Cover and blend until smooth. Return mixture to saucepan. Stir in milk and heat through.To serve, dollop each serving with a small amount of yogurt and stir slightly to swirl. If desired, sprinkle with additional nutmeg. Makes 6 servings.
