Chicken casserole(this is low in fat and cholesterol)
Ingredients/Components
- salt - 1/4 tsp
- water - 4 c
- plain low-fat yogurt - 4 oz
- pepper - 1/4 tsp
- skim milk - 1/2 c
- vegetable cooking spray - 1 item
- can cream of chicken soup undiluted - 1/2 1/2
- crackers, crushed - 5 item
- skinned chicken breast halves - 4 (3
- low-fat melted margarine - 1 tsp
How to make chicken casserole(this is low in fat and cholesterol):
Combine chicken breast halves and water in a medium saucepan. Cover and bring to a boil. Reduce heat and simmer 15 to 20 minutes or until done; drain well. Remove chicken from bones; coarsely chop chicken. Place chopped chicken in a 1-quart casserole dish coated with cooking spray and sprinkle with salt and pepper. Combine milk, yogurt and soup in a medium bowl, stirring until well blended. Spoon mixture evenly over chicken. Combine crushed crackers and melted margarine, stirring well.
