Sweet potato soup
Ingredients/Components
- salt
- ground cinnamon
- ground nutmeg - 1/4 tsp
- clove garlic, minced - 1 item
- chicken stock - 2 qt
- half and half cream - 1/2 pt
- almonds, toasted - 3/4 oz
- onion, diced small - 3 oz
- celery, diced small
- Stir occasionally
- leeks, diced small
- sweet potatoes, diced, boiled and coarsely whipped
- maple syrup Baby Brother prefers honey instead - 1 tsp
- dry currants - 3/4 oz
How to make sweet potato soup:
Put all of the ingredients in a large pot and cook for one hour. Stir occasionally. Transfer to a soup tureen and serve hot. Replenish as needed. Sit back and enjoy!Soup Garnish:1 3/4 oz. heavy cream, whipped3/4 oz. almonds, toasted3/4 oz. dry currants Mix ingredients in a small bowl.
