Sweet potato pudding

Ingredients/Components

• sugar - 6 Tbsp
• eggs - 3 item
• milk - 1 c
• salt - 1 tsp
• butter - 3 Tbsp
• mashed sweet potatoes 4 or 5 large sweet potatoes - 3 c
• miniature marshmallows to cover top - 1 item

How to make sweet potato pudding:

Cook sweet potatoes with skins on until soft. Peel and put through food mill. Add sugar, salt, melted butter and milk. Beat eggs well and add to mixture. Pour in 2-quart buttered baking dish. Bake at 350° for 45 minutes, putting marshmallows on top for last 10 to 15 minutes. Serves 8.
