Sweet potato pie
Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- packed brown sugar - 1/2 c
- nutmeg - 1/2 tsp
- all-purpose flour - 1/3 c
- shredded coconut - 1/2 c
- can evaporated milk - 1 oz
- mashed sweet potatoes
- unbaked 9-inch pie crust - 1 item
- soft margarine or butter
- chopped pecans or black walnuts - 1/2 c
How to make sweet potato pie:
Topping:1/3 c. soft margarine or butter1/3 c. all-purpose flour1/2 c. packed brown sugar1/2 c. shredded coconut1/2 c. chopped pecans or black walnuts In a mixing bowl, blend sugar and spices. Beat eggs. Add milk and vanilla. Combine with sugar mixture. Stir in potatoes and beat until smooth. Pour into pie crust, then bake at 425° for 15 minutes. Reduce heat to 350° and bake for 30 minutes more. Remove pie from oven; sprinkle with topping. Bake 10 minutes more or until topping is golden brown, then cool on a rack. Store in refrigerator.
