Sweet potato muffins
Ingredients/Components
- cinnamon - 1/2 tsp
- salt - 1 tsp
- nutmeg - 1/2 tsp
- baking powder - 1 Tbsp
- large egg - 1 item
- unsifted flour
- margarine, melted - 1/4 c
- cooked mashed sweet potatoes - 1 c
- dark, seedless raisins - 1/2 c
- 1/4 ____ light brown sugar - 1 item
How to make sweet potato muffins:
Heat oven to 400°. Grease 12 muffin cups. In medium bowl, combine flour, brown sugar, baking powder, salt and spices. In small bowl, beat eggs together, milk, sweet potatoes and butter. Add dry ingredients. Stir until well moistened. Stir in raisins. Spoon in muffin cups. Bake 15 to 20 minutes. Service warm.Recipe categories: Breads, Quick breads, Muffins.
